Mexican Tea Cakes (a.k.a Russian Tea Cakes)

Sweet, bite-size cookies. Guaranteed to be a hit at your next Holiday Party!

Ingredients

  • I cup butter
  • 1/2 cup confectioners sugar
  • 1 tablespoon vanilla extract
  • 2 1/4 All Purpose Flour
  • 1/4 tablespoon Salt
  • 1/2 Cup Chopped Walnuts
  • Extra confectioners sugar for rolling

Instructions

  1. Cream butter and sugar together

  2. Add Vanilla

  3. Sift flour + salt together, add to creamed mixture.

  4. Add nuts

  5. Chill in the refrigerator for several hours.

  6. Roll into small balls about 1 inch in diameter

  7. Bake on a buttered cookie sheet in hot oven (400'F) for 11-14 minutes

  8. As soon as removed from oven, roll in confectioners sugar

  9. Cool on wire rack

  10. Roll in confectioners sugar again.

  11. Yields about 2 1/2 dozen cookies
