Mexican Tea Cakes (a.k.a Russian Tea Cakes)
Sweet, bite-size cookies. Guaranteed to be a hit at your next Holiday Party!
Ingredients
- I cup butter
- 1/2 cup confectioners sugar
- 1 tablespoon vanilla extract
- 2 1/4 All Purpose Flour
- 1/4 tablespoon Salt
- 1/2 Cup Chopped Walnuts
- Extra confectioners sugar for rolling
Instructions

Cream butter and sugar together

Add Vanilla

Sift flour + salt together, add to creamed mixture.

Add nuts

Chill in the refrigerator for several hours.

Roll into small balls about 1 inch in diameter

Bake on a buttered cookie sheet in hot oven (400'F) for 11-14 minutes

As soon as removed from oven, roll in confectioners sugar

Cool on wire rack

Roll in confectioners sugar again.

Yields about 2 1/2 dozen cookies
