Vino Bambino Salad

This is my twist on the “Vino Bambino” salad from Oregano’s in Phoenix, AZ – a fresh, tasty mix of greens, pasta, and smoked turkey breast. It’s super easy to throw together and is always a hit when I make it.

Ingredients

  • 2 cups pasta
  • 1 head romaine lettuce
  • 1 red bell pepper (diced)
  • 1/4 cup green onion (diced)
  • 1/4 cup cilantro
  • 1 pound smoked turkey breast
  • 1/2 cup parmesan cheese
  • Cardini's ceasar dressing

Instructions

  1. Cook pasta according to package directions and let cool

  2. Chop up the lettuce, bell pepper, green onion, cilantro, and smoked turkey while the pasta is cooking

  3. Combine pasta, veggies, turkey, parmesan in a large bowl

  4. Toss everything with ceasar dressing. Start with a little and add more as needed.

  5. Serve right away
