Ingredients
- 1 box or package of pre-washed quinoa
- 3 semi-ripe peaches
- 2 almost ripe avocados
- 1 small container of cherry tomatoes
- 1 small container of feta cheese
- 2 Tablespoons of Lemon Juice
- 1 Carton of Chicken Stock (optional)

Instructions

1Cook Quinoa —> follow instructions on box or package —> you can use water as instructed or substitute the water with chicken stock (for more flavor)

2Put cooked quinoa in the fridge (or freezer) to cool down

3Cut cherry tomatoes in half, dice peaches, cut avocados into small cubes

4Gently mix in tomatoes, peaches, avocado, crumbled feta, and lemon juice - into chilled quinoa

5Keep chilled until ready to serve
