Louisiana Dirty Rice

Ingredients

  • 5 cups cooked rice
  • 1 lb uncased sausage
  • 1 lb chicken or game liver, chopped finely
  • 1 cup chopped onion
  • 3/4 cup chopped green bell pepper
  • 1/4 chopped celery
  • 1 cup stock
  • chopped garlic to taste
  • 1/4 cup chopped parsley

Instructions

    In large saute pan, heat oil and brown liver and sausage.

    Add the trinity & garlic, cook for about 5 minutes.

    Add stock, scraping browned bits from bottom of pan. Bring to boil for a few minutes until reduced slightly.

    Fold in rice and parsley, season to taste.
