Ingredients
- 3/4 pound smoked sausage
- 4 large carrots
- 5 stalks of celery
- 1 1/2 bell peppers
- 2 medium onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon thyme
- 1/4 teaspon cayenne pepper
- 2 bay leaves
- 1/4 teaspoon salt
- 1 1-pound 12-ounce can of diced tomatoes

Instructions

1Chop carrots, celery, bell peppers, onions, and sausage into 1/2 inch pieces.

2Heat pot to medium heat.

3Cook sausage pieces in pot until they begin to brown.

4Reduce heat to simmer.

5Add carrots, celery, onion, and bell pepper, and toss lightly to coat with sausage drippings.

6Add garlic powder, thyme, cayenne pepper, salt, and bay leaves, and stir.

7Pour in tomatoes into pot and stir.

8Cover and simmer for approximately 30 minutes, or until vegetables start to soften.

9Serve over a bed of rice.
