My go-to jambalaya recipe.

Ingredients

  • 3/4 pound smoked sausage
  • 4 large carrots
  • 5 stalks of celery
  • 1 1/2 bell peppers
  • 2 medium onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1/4 teaspon cayenne pepper
  • 2 bay leaves
  • 1/4 teaspoon salt
  • 1 1-pound 12-ounce can of diced tomatoes

Instructions

    Chop carrots, celery, bell peppers, onions, and sausage into 1/2 inch pieces.

    Heat pot to medium heat.

    Cook sausage pieces in pot until they begin to brown.
  4. 4
    Reduce heat to simmer.

    Add carrots, celery, onion, and bell pepper, and toss lightly to coat with sausage drippings.

    Add garlic powder, thyme, cayenne pepper, salt, and bay leaves, and stir.

    Pour in tomatoes into pot and stir.

    Cover and simmer for approximately 30 minutes, or until vegetables start to soften.

    Serve over a bed of rice.
