Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp coconut oil
  • A pinch of salt
  • Chopped peanuts for garnish (optional)

Instructions

  1. 1
    1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. 2
    2. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared pan to form a crust. Bake for 10 minutes, then remove from the oven and let it cool.
  3. 3
    3. In a large mixing bowl, beat together the creamy peanut butter, powdered sugar, cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Spread this luscious mixture over the cooled crust.
  4. 4
    4. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth. Pour the chocolate over the peanut butter layer and spread it evenly.
  5. 5
    5. Sprinkle a pinch of salt on top and add chopped peanuts if desired for extra crunch.
  6. 6
    6. Refrigerate the bars for at least 4 hours or until set. Once set, lift the bars out of the pan using the parchment overhang and cut into squares.
