Harris's Bougie Butter Noodles
Vietnamese garlic noodles… but for a toddler. This is a one-pot recipe because parents don't have the energy to clean extra dishes after the bath / bedtime routine is done.

Ingredients
- 4 oz. thin spaghetti
- 3 tbsp butter
- 2 pods of Trader Joe's Garlic Cubes …because nobody has time to mince garlic
- 1 tbsp fish sauce
- 1 tbsp rice wine vinegar

Instructions

1Grab a 12" frying pan and fill with two (2) cups water. Salt the water (unless you plan to use salted butter) and bring it to a nice boil.

2Snap the spaghetti in half. …Yes, this will cause your Nonna to rollover in her grave. But let's get real, you're going to be dicing the cooked pasta down into tiny bites before serving anyways.

3Add broken spaghetti and garlic pods to the boiling water. As the noodles cook, the water becomes incredibly starchy (a.k.a. the perfect base for our sauce).

4Once the spaghetti is al dente, add butter, fish sauce, and vinegar. Stir until everything has emulsified into a creamy sauce.

5If sauce looks too tight, splash in a bit more water. Continue stirring until spaghetti is fully cooked.

6Serve half of the spaghetti to your toddler, cut into tiny pieces. Reserve the rest for whichever parent had the harder day.
