Banana Banana Bread

It’s banana bread but with a bit more banana than average. Originally found online somewhere, I’ve tweaked it over the years into a fairly consistent winner among friends and family.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1 tsp baking soda
  • 2 eggs, beaten
  • 1/4 tsp salt
  • 1/2 cup (1 stick) butter, soft
  • 2 1/3 cups bananas, mashed (~6 whole bananas)
  • Chocolate chips or walnut pieces (optional)

Instructions

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan or 10 inch cast iron skillet.

    In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour into pan.

    Cover the top in a layer of chocolate chips or walnut pieces, if desired.

    Bake for 60 to 65 minutes (~40m in cast iron skillet), until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
