Ingredients
- 1/2 stick salted butter
- 1/4 large onion, diced
- 30g all-purpose flour
- 2 cups heavy cream
- 2 cups chicken broth
- 1 head broccoli, chopped into bite-size pieces
- 1 large carrot, julienned to 0.5"
- 1/4 tsp ground nutmeg
- 8 oz sharp cheddar, grated
- salt, to taste
- black pepper, to taste

Instructions

1Melt the butter in a pot over medium-high heat. Add the onions, season to taste, and sauté until softened.

2Add the flour to the mixture and cook for 1-2 minutes to form a roux, then whisk in the heavy cream and chicken stock.

3Add the broccoli and carrots and turn down the heat to low.

4Allow to cook for 20-25 minutes, stirring occasionally, until the vegetables are tender.

5Add salt and pepper to taste. Optionally, remove 1 cup of soup, blend using an immersion blender, and stir it back into the soup for a smoother result.

6Add in the cheese and nutmeg, stirring until incorporate. Serve hot with crusty bread.
