Broccoli cheddar soup

Ingredients

  • 1/2 stick salted butter
  • 1/4 large onion, diced
  • 30g all-purpose flour
  • 2 cups heavy cream
  • 2 cups chicken broth
  • 1 head broccoli, chopped into bite-size pieces
  • 1 large carrot, julienned to 0.5"
  • 1/4 tsp ground nutmeg
  • 8 oz sharp cheddar, grated
  • salt, to taste
  • black pepper, to taste

Instructions

    Melt the butter in a pot over medium-high heat. Add the onions, season to taste, and sauté until softened.

    Add the flour to the mixture and cook for 1-2 minutes to form a roux, then whisk in the heavy cream and chicken stock.

    Add the broccoli and carrots and turn down the heat to low.

    Allow to cook for 20-25 minutes, stirring occasionally, until the vegetables are tender.

    Add salt and pepper to taste. Optionally, remove 1 cup of soup, blend using an immersion blender, and stir it back into the soup for a smoother result.

    Add in the cheese and nutmeg, stirring until incorporate. Serve hot with crusty bread.
