Simple Filipino Chicken Adobo

Ingredients
- 2-3 lbs bone-in, skin-on chicken thighs or drumsticks
- Salt, to taste
- Pepper, to taste
- 1-2 tbsp neutral oil
- 15-20 whole garlic cloves, smashed
- 3-5 bay leaves, fresh or dried
- 1 cup Datu Puti vinegar (sub. distilled white or apple cider vinegar)
- 3/4 cup Datu Puti soy sauce (sub. Japanese soy sauce)
- 1/4 cup brown sugar

Instructions

1Salt and pepper the chicken lightly on all sides. You'll be simmering this in a salty braise liquid, so don't go overboard.

2Heat up the oil in a wok or large saucepan over medium-high heat until shimmering. Add the chicken and cook, turning occasionally, until lightly browned all over (about 4-5 minutes).

3Add the garlic and bay leaves and stir to combine, letting the garlic lightly fry in the oil until fragrant (about 30 seconds).

4Add the vinegar, soy sauce, and sugar, then stir to combine. Bring the mixture to a boil, then reduce the heat to a bare simmer. Cover and let braise for 30 minutes.

5Flip the chicken over, then cover and let braise until the chicken is fully tender and the sauce is thick and coats the chicken in a dark glaze.

6Serve over rice.
