Simple Filipino Chicken Adobo

A delicious sweet, salty, tangy chicken dish that takes next to no effort. All amounts in this recipe are approximate, feel free to play around with amounts or additions!

Ingredients

  • 2-3 lbs bone-in, skin-on chicken thighs or drumsticks
  • Salt, to taste
  • Pepper, to taste
  • 1-2 tbsp neutral oil
  • 15-20 whole garlic cloves, smashed
  • 3-5 bay leaves, fresh or dried
  • 1 cup Datu Puti vinegar (sub. distilled white or apple cider vinegar)
  • 3/4 cup Datu Puti soy sauce (sub. Japanese soy sauce)
  • 1/4 cup brown sugar

Instructions

    Salt and pepper the chicken lightly on all sides. You'll be simmering this in a salty braise liquid, so don't go overboard.

    Heat up the oil in a wok or large saucepan over medium-high heat until shimmering. Add the chicken and cook, turning occasionally, until lightly browned all over (about 4-5 minutes).

    Add the garlic and bay leaves and stir to combine, letting the garlic lightly fry in the oil until fragrant (about 30 seconds).

    Add the vinegar, soy sauce, and sugar, then stir to combine. Bring the mixture to a boil, then reduce the heat to a bare simmer. Cover and let braise for 30 minutes.

    Flip the chicken over, then cover and let braise until the chicken is fully tender and the sauce is thick and coats the chicken in a dark glaze.
