Breakfast Cookies

Coconut cookies with a bit of everything

Ingredients

  • 2 sticks of butter
  • 1 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 Lg eggs
  • 2 tsp vanilla
  • 1 tsp coconut flavor
  • 2 cups self rising flour
  • 2 cups baker's sweetened coconut
  • 2 cups of Quick (1 minute) oats
  • 2 heaping cups of corn flakes measured then crushed
  • 1 cup semi sweet mini choclate chips (recommended) or 1 cup chopped pecans

Instructions

    Cream butter and sugar together (I usually use a hand blender and let the butter warm up a bit)

    Add eggs one at a time while mixing
  3. 3
    Mix in vanilla and coconut flavor
  4. 4
    Add flour, then coconut, then oats, and crushed corn flakes last
  5. 5
    Drop by cookie scoop
  6. 6
    Bake 350 degrees Fahrenheit for 14 minutes (Want to watch and may need to adjust time)
