Romesco dressing for a simple cesar-style salad with romain, croutons, and manchego

Ingredients

  • 1 roasted red pepper
  • 2-3 homemade croutons (1/4in slices of baguette pan fried in olive oil)
  • 2 cloves garlic (chopped)
  • 1 tbsp + a little bit sherry vinegar or rice wine vinegar
  • 1/4 cup olive oil
  • 1.5 tsp paprika
  • 2 tbsp chopped smoked almonds
  • water to thin

    Blend in food processor and add water to thin into a think but dripping dressing
