Sauce gastrique

A suggar, vinegar and red wine based gastrique for a sauce

Ingredients

  • 150gr sugar
  • 1dl redwine vinegar
  • 2dl redwine

Instructions

    Slowly melt 150gr sugar until it turns a golden brown caramel.
  2. 2
    When the sugar has melted into caramel, pour in 1dl of red wine vinegar and 2dl of red wine.
  3. 3
    Simmer gently over low heat for 20–30 minutes. The gastrique should not become too thick, as it will continue to thicken as it cools.
