Sauce stock

Stock to form the base of a sauce.

Ingredients

  • 150gr bacon
  • 4 cloves of garlic
  • 3 carrots
  • 1/2 celeriac
  • 1 leek
  • 2 beetroot
  • 1 beef broth
  • Herbes de provence
  • Salt and peber

Instructions

    Cut all vegetables into medium-sized slices.

    Melt a knob of butter with a little olive oil in a pan, then fry the bacon, onion, and garlic until the bacon is golden and crispy. Season with pepper and a pinch of salt.

    Add the rest of the vegetables to the pot.

    Pour 1 or 2 dl of red wine into the pan.

    Cover the vegetables with water.

    Cook covered for one to two hours to bring out the flavor of the vegetables.

    Pour the vegetables and juice through a sieve to set the juice aside.
