Ingredients
- 200g white flour
- 100g whole wheat flour
- 3g fresh yeast (or 1g dry active yeast)
- 6g salt
- 230ml water
- 1 tsp honey
- toppings of choice

Instructions

1dissolve the yeast in the water, then add honey and salt

2add the flours and mix together to form a scrappy dough

3let the dough rest in an oiled container in the fridge for 12-16 hours

4preheat the oven to 230 C (upper-lower heat)

5on a baking sheet, form buns, brush with water, add toppings and let them rest at room temperature for 30 minutes
-
6bake the buns for 25 minutes with a lot of steam (dump a quarter glass into the bottom of the oven when putting the buns in)
