This has been a family holiday tradition for several decades running. It's something we make in batches and hand out as gifts.

Ingredients

  • 2 lbs of pecan halves
  • 2 Tbsp salted butter
  • 1/3 cup olive oil
  • 4 Tbsp dried rosemary (6 Tbsp if fresh)
  • 1.5 tsp paprika
  • 2 tsp salt (or to taste)
  • Sprinkle of cayenne pepper

Instructions

  1. 1
Preheat oven to 300 degrees, 275 if convection
  2. 2
Melt butter in a small saucepan; mix with oil and spices besides the cayenne
  3. 3
Pour the mixture over pecans in a large bowl. Dust lightly with cayenne pepper. Mix gently but thoroughly until pecans are well coated.
  4. 4
Spread in a single layer across baking sheets (2 half sheets should suffice) and transfer to oven.
  5. 5
Bake for 20 minutes and remove to stir. Continue to bake, stirring every 10 minutes, until desired texture is reached. Probably 30-40m total.
