Greek Chicken Orzo Salad

A healthy lunch with veggies and chicken

Ingredients

  • 1 cup orzo
  • 2 chicken breasts
  • 1 can artichokes
  • 1 can kalamata olives
  • basket cherry tomatoes
  • 1 cucumber
  • handful feta cheese
  • 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp red wine vinnegar

Instructions

    Dice all veggies

    Sautee chicken seasoning with oregano, parsley, salt, and pepper
  3. 3
    Dice chicken small
  4. 4
    Cook orzo
  5. 5
    Toss all together in bowl with lemon, oil, and vinnegar
