Smothered Parsnip & Apple
At the end of winter, food reserves would be low in medieval times but you might be able to make a festive easter meal with a few left over apples and parsnips. I prefer to cook this meal in a ceramic pot as these could be found in every Carolingian household.

Ingredients
- 1 spoon butter
- 1 parsnip in small pieces
- warm water
- 1 apple, in small pieces
- 1 spoon honey
- 30 gram oats
- handful walnuts
- salt

Instructions

1Put the ceramic pot close to the fire but not in the flames. During cooking you keep turning the pot now and then to let it heat evenly. Always be aware of big temperature changes as it may break your pot.

2Put the butter in the pot and let it melt. Add the parsnip and let it smother with a little bit of water until it is soft.

3Add the apple pieces with a little bit of extra water and the honey. Let it simmer till apple is soft.

4Now add the oats, stir well and put the ceramic cooking pot away from the fire. Let it stand for another 15 minutes and it is ready to eat.

5On your plate add the walnuts and salt according to taste!
