Ingredients
- 3 beets
- 1/2 lb brussels sprouts or any cruciferous veggie
- 6 oz farro
- Greens like lettuce or spinach or kale
- 5 eggs
- Tahini
- 1 lemon
- Salt
- Pepper

Instructions

1Wrap beets in tin foil and bake at 400F for 45 mins

2Roast other veg

3Boil farro
-
4Soft boil eggs (6-6.5min)

5Prepare dressing by shaking tahini, lemon, water, salt, and pepper in a jar. It will thicken overnight so to loosen just add a little more water and shake

6Combine all ingredients in to-go container to put together
