Veggie Grain Lunch Bowl

An easy, healthy, lunch template using seasonal veggies

Ingredients

  • 3 beets
  • 1/2 lb brussels sprouts or any cruciferous veggie
  • 6 oz farro
  • Greens like lettuce or spinach or kale
  • 5 eggs
  • Tahini
  • 1 lemon
  • Salt
  • Pepper

Instructions

    Wrap beets in tin foil and bake at 400F for 45 mins

    Roast other veg
  3. 3
    Boil farro
  4. 4
    Soft boil eggs (6-6.5min)

    Prepare dressing by shaking tahini, lemon, water, salt, and pepper in a jar. It will thicken overnight so to loosen just add a little more water and shake

    Combine all ingredients in to-go container to put together
