Ingredients

  • 8 oz bacon, chopped
  • 1 tablespoon butter
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 3 tablespoons flour
  • 4 cups chicken broth
  • 1 1/2 cups half-and-half
  • 16 oz potato gnocchi
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper, to taste
  • 1/4 teaspoon thyme
  • Fresh parsley, for garnish

Instructions

  1. 1
In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  2. 2
Add butter to the pot, followed by the diced onion and minced garlic. Saute until the onion becomes translucent.
  3. 3
Stir in the flour and cook about 2 minutes to make a roux. Slowly whisk in the chicken broth and half-and-half, ensuring there are no lumps.
  4. 4
Bring to a gentle simmer. Add the potato gnocchi and cook about 5 minutes, until they float to the surface.
  5. 5
Stir in the shredded cheddar, cooked bacon, thyme, salt, and pepper to taste.
  6. 6
Simmer another 5 minutes, allowing the soup to thicken.
  7. 7
Serve hot, garnished with fresh parsley.
