- 8 oz bacon, chopped
- 1 tablespoon butter
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 3 tablespoons flour
- 4 cups chicken broth
- 1 1/2 cups half-and-half
- 16 oz potato gnocchi
- 1 cup sharp cheddar cheese, shredded
- Salt and pepper, to taste
- 1/4 teaspoon thyme
- Fresh parsley, for garnish

Instructions

1In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

2Add butter to the pot, followed by the diced onion and minced garlic. Saute until the onion becomes translucent.

3Stir in the flour and cook about 2 minutes to make a roux. Slowly whisk in the chicken broth and half-and-half, ensuring there are no lumps.

4Bring to a gentle simmer. Add the potato gnocchi and cook about 5 minutes, until they float to the surface.
