German Lye Pretzels (Brezeln)
Soft German lye pretzels (Laugenbrezeln) with a chewy interior and deep brown crust.

Ingredients
- 500 g white flour (Type 550)
- 250 g milk, oat, or soy milk - or 125 ml beer (lager, wheat, or pilsner) plus 125 ml water
- 30 g butter (or alternative)
- 10 g salt
- 15 g sugar
- 15 g fresh yeast (or 8 g dry yeast); optionally 150 g sourdough starter
- For the lye bath: 2 liters water
- For the lye bath: 40 g baking soda
- For the lye bath: 15 g salt
- Coarse salt, for sprinkling

- 8 pretzels
Instructions

1Warm the milk to room temperature or slightly warmer, stir in the yeast and sugar, and let sit about 5 minutes.

2Combine all dough ingredients and knead into a dough for about 10 minutes.

3Either let rise about 1 hour until roughly doubled, or let rise slowly in the fridge at least 8 hours (ideally 24-36) for more flavor.

4Divide the dough into 8 equal pieces. Flatten each, fold into a roll, and stretch into a long rope that is thinner at the ends. Shape into a pretzel with the classic knot.

5Bring the baking-soda bath to a boil and dip each pretzel about 1 minute, then place on a parchment-lined baking sheet.

6Cut a shallow slit along the thick part of each pretzel and sprinkle with coarse salt and/or herbs.

7Preheat the oven to 220 degrees C (430 degrees F) and bake for 20 minutes.
