Cheese Buns
Soft enriched rolls rolled with grated cheddar, plus variations for plain dinner rolls.
Ingredients
- 2 cups bread flour (all-purpose can be substituted)
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1/4 cup butter, margarine, or shortening, softened
- 1 tablespoon milk
- 1 egg yolk plus water to measure 3/4 cup
- 1 teaspoon active dry yeast
- 1 egg yolk, beaten (for brushing)
- Cheddar cheese, grated
Instructions

1Mix and knead the dough. Place in a warm spot about an hour, covered with a barely damp towel, and let rise.

2Punch the dough down and let it rise again for half an hour.

3On a floured surface, roll the dough into a large rectangle. Preheat the oven to 375 degrees F.

4Sprinkle the dough with grated cheese and roll it into a cylinder.

5Slice the cylinder into buns just over an inch thick.

6Place buns on a greased pan, cover with a damp towel, and let rise in a warm spot about 1 hour.

7Brush with beaten egg yolk and bake at 375 degrees F for 8-10 minutes.

8Bow Knots variation: roll the dough into 12 ropes about 8 inches long, tie each into a knot, place on a greased baking sheet, then let rise and bake as directed.

9Clover Leaf Rolls variation: shape the dough into 36 balls, place 3 in each greased muffin cup, let rise, brush with melted butter, and bake as directed.

10Parker House Rolls variation: roll the dough into a 12-inch round, cut 12 rolls with a 2-inch cutter, spread each with 1/4 teaspoon softened butter, fold in half and press lightly, then let rise and bake as directed.
