Mulled Wine Spice (Gluehweingewuerz)
Spice blends for making mulled wine (Gluehwein), with separate mixes for red and white wine, each per 1 liter.
Ingredients
- For red wine (per 1 L): 1 organic orange, peel or slices
- For red wine: 2 cinnamon sticks (or 1 teaspoon ground)
- For red wine: 5 cloves (or 1 teaspoon ground)
- For red wine: 4 cardamom pods (or 1 teaspoon ground)
- For red wine: 3 whole star anise
- For red wine: 3 tablespoons brown rock sugar (or white sugar)
- For red wine: 1 pinch nutmeg
- For white wine (per 1 L): 1 organic orange, peel or slices
- For white wine: 1 organic lemon, peel
- For white wine: 1 cinnamon stick
- For white wine: 1 knife-tip ginger powder
- For white wine: 3 cloves
- For white wine: 3 cardamom pods
- For white wine: 1 pinch nutmeg
- For white wine: 1 vanilla pod (or 1 sachet vanilla sugar)
Instructions

1Mix together the ingredients for either the red or white mulled wine blend.

2To make a larger batch to store, scale up the amounts and mix well. Fill into light-proof tins and use within about 2 months (jars work too, but store them in the dark).

3To grind cardamom or star anise fresh, use a spice or coffee grinder, or a mortar (note the spices won't dissolve as finely).

4It's best to use ground spices for the fine ingredients and leave coarse ones - cinnamon stick, vanilla pod, star anise - whole, removing them before serving.
