Yeast Cake with Cinnamon Topping (Hefekuchen)
A classic German sweet yeast dough for a sheet cake, plus a cinnamon-sugar topping variation (Zimtkuchen).
Ingredients
- 500 g flour
- 100 g butter
- 40 g fresh yeast
- Salt
- 4 tablespoons sugar
- Lukewarm milk, as needed
- For the cinnamon topping: melted butter
- For the cinnamon topping: sugar
- For the cinnamon topping: cinnamon
Instructions

1Stir the yeast smooth in a little lukewarm milk. Put the flour in a bowl, make a well, and stir the yeast mixture into a small pre-dough in the center (about the thickness of a thick pancake batter).

2Cover and let the pre-dough rise in a warm place.

3Add the lukewarm melted butter and the remaining ingredients to the pre-dough. Knead vigorously, adding enough lukewarm milk until the dough is smooth, supple, and pulls away from the bowl - knead until it forms bubbles.

4Let rise again in a warm place until doubled in size.

5Roll out the dough and place on a well-greased baking sheet.

6For Zimtkuchen: spread the dough about 2 cm thick in a greased pan and let rise another 15 minutes. Just before baking, brush with melted butter, sprinkle with sugar and cinnamon, and bake at moderate heat (170-180 degrees C / 340-355 degrees F) for 30 minutes.
