Bavarian Pretzel Salad (Brezensalat)
A Bavarian salad of pan-toasted pretzel pieces with radishes, tomatoes, cucumber, and mountain cheese in a sweet-mustard dressing.
Ingredients
- 2-3 pretzels (Brezen)
- 3 tablespoons butter
- 10 radishes
- 1 red onion
- 10 cherry tomatoes
- 3 mini cucumbers or 1 salad cucumber
- 150 g firm mountain cheese (Bergkaese), in one piece
- 2 large handfuls baby spinach, lamb's lettuce, or mixed leaves
- 3 tablespoons red wine vinegar
- 1-1.5 tablespoons sweet mustard
- 1 teaspoon honey
- 4 tablespoons olive oil
- 1/4 bunch chives
- Salt and freshly ground black pepper
Instructions

1Cut the pretzels into bite-size pieces and fry in the butter until crispy. Season with salt and pepper and set aside.

2Slice the radishes, cut the onion into rings, quarter the tomatoes, and slice the mini cucumbers into rounds. Cube the mountain cheese. Place everything with the baby spinach in a large bowl.

3Whisk together the vinegar, mustard, honey, and olive oil and season with salt and pepper.

4Slice the chives into rolls and add to the dressing.

5Add the dressing and the toasted pretzel pieces to the salad and toss gently. Serve.
