Rosemary-Apple Roast Pork
A garlic-and-rosemary marinated pork loin roast served with warm homemade cinnamon applesauce.
Ingredients
- 1/4 cup olive oil
- 2 teaspoons salt
- 4 teaspoons garlic powder
- 4 teaspoons minced fresh rosemary or 1 1/2 teaspoons dried rosemary, crushed
- 2 teaspoons pepper
- 1 boneless pork loin roast (2 to 3 pounds), halved
- For the applesauce: 1/4 cup butter, cubed
- For the applesauce: 6 medium Golden Delicious apples, peeled and chopped (about 5 cups)
- For the applesauce: 1 to 2 teaspoons ground cinnamon
- For the applesauce: 2 teaspoons brown sugar
- For the applesauce: 1 1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
- For the applesauce: 1/2 teaspoon salt
- For the applesauce: 1 cup water
Instructions

1In a large shallow dish, combine the olive oil, salt, garlic powder, rosemary, and pepper. Add the pork and turn to coat. Cover and refrigerate 8 hours or overnight.

2Preheat the oven to 350 degrees F. Place the pork roast on a rack in a shallow roasting pan, fat side up. Roast until a thermometer reads 145 degrees F, 55-65 minutes.

3Meanwhile, in a large skillet, heat the butter over medium heat. Add the apples, cinnamon, brown sugar, rosemary, and salt; cook until the apples are tender, 8-10 minutes, stirring occasionally.

4Stir in the water and bring to a boil. Reduce the heat and simmer, uncovered, until the apples are very soft, about 10 minutes. Remove from the heat and mash the apples to the desired consistency.

5Remove the roast from the oven and tent with foil. Let stand 10 minutes before slicing. Serve with the warm applesauce.
