Greek Chicken Souvlaki with Tzatziki

Chicken marinated in olive oil, lemon, garlic and oregano, threaded on skewers and grilled, then tucked into warm pita with cool cucumber-yogurt tzatziki.

Ingredients

  • 2 1/2 lb boneless skinless chicken breast, cut into pieces
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 2 tbsp dried oregano
  • 1 tsp sweet paprika
  • 1/4 cup dry white wine
  • 10 garlic cloves
  • 1 tsp each salt and black pepper
  • 1/4 cup extra-virgin olive oil
  • Juice of 1 lemon
  • Greek pita bread
  • Sliced tomato, cucumber, onion, Kalamata olives
  • Tzatziki sauce

Instructions

    Blend garlic, oregano, rosemary, paprika, salt, pepper, olive oil, wine and lemon juice into a marinade.

    Toss chicken with marinade and bay leaves; refrigerate 2 hours to overnight.

    Soak wooden skewers; thread chicken.

    Grill skewers, turning, until charred and cooked through.
