Bone-in chicken marinated and braised in red wine with bacon, mushrooms and onions until the meat is succulent and the sauce is dark, glossy and rich.

Ingredients

  • Bone-in chicken pieces
  • Red wine (for marinade and braise)
  • Bacon lardons
  • Button mushrooms
  • Pearl onions
  • Onion and garlic
  • Beef or chicken stock
  • Butter and flour
  • Thyme, bay leaf, parsley
  • Salt and pepper

Instructions

    Marinate chicken overnight in red wine with onion and herbs.

    Strain and reserve wine; pat chicken dry.

    Reduce the wine by half on the stove.

    Cook bacon until golden; sauté chicken, mushrooms and onions separately.

    Combine with reduced wine and stock; braise about 45 minutes.
