  • Yogurt and biryani spices
  • Basmati rice
  • Onions (for frying)
  • Saffron soaked in warm milk/water
  • Ghee
  • Whole spices (cardamom, cloves, cinnamon, bay)
  • Ginger, garlic
  • Mint and cilantro
  • Salt

Instructions

    Marinate chicken in spiced yogurt.

    Fry onions until golden and crisp; reserve.

    Par-boil basmati rice with whole spices; drain.

    Cook the marinated chicken into a thick curry base in a heavy pot.
