Cheese Enchiladas

Corn tortillas rolled around plenty of melty cheese, blanketed in red enchilada sauce and baked until bubbling — simple, comforting and fast.

Ingredients

  • 1 1/4 cup easy enchilada sauce, (divided)
  • 8 corn or flour tortillas ((see notes if using flour tortillas))
  • 2 1/2 cups shredded Mexican-blend cheese, (divided)
  • toppings: diced onions, chopped cilantro, sour cream, shredded lettuce

Instructions

    Heat the oven to 350°F and spread a little enchilada sauce over the bottom of a baking dish.

    Warm the tortillas until pliable.

    Fill each tortilla with cheese, roll, and place seam-side down in the dish.

    Top with the remaining sauce and cheese; bake 15-20 minutes until melted.

    Serve with your choice of toppings.
