Ingredients
- 1 1/4 cup easy enchilada sauce, (divided)
- 8 corn or flour tortillas ((see notes if using flour tortillas))
- 2 1/2 cups shredded Mexican-blend cheese, (divided)
- toppings: diced onions, chopped cilantro, sour cream, shredded lettuce

Instructions

1Heat the oven to 350°F and spread a little enchilada sauce over the bottom of a baking dish.

2Warm the tortillas until pliable.

3Fill each tortilla with cheese, roll, and place seam-side down in the dish.

4Top with the remaining sauce and cheese; bake 15-20 minutes until melted.

5Serve with your choice of toppings.
