Ingredients
- 1 pound dried pinto beans
- 1 yellow onion, (halved, divided)
- 5 cloves garlic, (divided)
- 1 bay leaf
- 1 teaspoon dried Mexican oregano, (divided)
- 3 teaspoons kosher salt, (divided, plus more to taste)
- Water, (as needed)
- 3 tablespoons olive oil, (or lard)
- 1 jalapeño pepper

Instructions

1Pick over and rinse the dried beans.

2Simmer with half an onion, garlic, bay leaf, oregano and salt in plenty of water 1½-2 hours until tender; drain, reserving the liquid.

3Sauté the diced onion, garlic, jalapeño, oregano and salt in oil until softened.

4Add the beans and cook briefly, then stir in some reserved liquid.

5Mash to your preferred texture, adding liquid as needed; season to taste.
