Ingredients
- 2 pounds boneless skinless chicken breast, (pounded to an even ½-inch thickness)
- 2 tablespoons olive oil, (plus more for cooking)
- 2 tablespoons lime juice ((about 1 lime))
- 2 tablespoons orange juice ((about ½ navel orange))
- ½ cup chopped cilantro
- 1 tablespoon soy sauce
- 3 cloves garlic, (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon paprika
- ½ teaspoon ancho chili powder
- ½ teaspoon freshly ground black pepper
- 2 tablespoons olive oil
- 2 bell peppers, (red and orange, cut into thin strips)
- 1 white onion, (thinly sliced)
- 1 teaspoon soy sauce
- Pinch kosher salt, (plus more to taste)

Instructions

1Toss the chicken with the oil, citrus juices, cilantro, soy sauce, garlic and spices; marinate while you cook the vegetables.

2Sauté the peppers and onion in oil with a little soy sauce and salt about 10 minutes until soft; set aside.

3Cook the marinated chicken in the same skillet about 10 minutes, until cooked through.

4Rest, then slice the chicken.
