Ingredients

  • 2 pounds boneless skinless chicken breast, (pounded to an even ½-inch thickness)
  • 2 tablespoons olive oil, (plus more for cooking)
  • 2 tablespoons lime juice ((about 1 lime))
  • 2 tablespoons orange juice ((about ½ navel orange))
  • ½ cup chopped cilantro
  • 1 tablespoon soy sauce
  • 3 cloves garlic, (minced)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon paprika
  • ½ teaspoon ancho chili powder
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 bell peppers, (red and orange, cut into thin strips)
  • 1 white onion, (thinly sliced)
  • 1 teaspoon soy sauce
  • Pinch kosher salt, (plus more to taste)

Instructions

    Toss the chicken with the oil, citrus juices, cilantro, soy sauce, garlic and spices; marinate while you cook the vegetables.

    Sauté the peppers and onion in oil with a little soy sauce and salt about 10 minutes until soft; set aside.

    Cook the marinated chicken in the same skillet about 10 minutes, until cooked through.

    Rest, then slice the chicken.

    Return everything to the skillet, toss, and serve in warm tortillas.
