Ground Beef Tacos

Ingredients

  • 1 ½ teaspoons olive oil
  • 1 pound ground beef
  • 3 tablespoons tomato paste ((see notes for using tomato sauce))
  • ½ cup water ((or beef broth))
  • 1 tablespoon chili powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • 1 tablespoon lime juice ((about ½ lime))
  • 12 corn tortillas
  • Oil, (for frying (vegetable oil, olive oil, or avocado oil are great))
  • Thinly shredded lettuce
  • Shredded cheese
  • Diced tomatoes
  • Sour cream

Instructions

    Brown the ground beef, breaking it up, and drain excess fat.

    Stir in the tomato paste, water and spices; cook 1 minute.

    Off the heat, stir in the lime juice.

    For the shells, fry the tortillas in an inch of oil, folding into a U shape, until crisp.

    Fill the shells with the beef and top with lettuce, cheese, tomato and sour cream.
