Ingredients
- 1 ½ teaspoons olive oil
- 1 pound ground beef
- 3 tablespoons tomato paste ((see notes for using tomato sauce))
- ½ cup water ((or beef broth))
- 1 tablespoon chili powder
- 1 teaspoon kosher salt
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon dried oregano
- 1 tablespoon lime juice ((about ½ lime))
- 12 corn tortillas
- Oil, (for frying (vegetable oil, olive oil, or avocado oil are great))
- Thinly shredded lettuce
- Shredded cheese
- Diced tomatoes
- Sour cream

Instructions

1Brown the ground beef, breaking it up, and drain excess fat.

2Stir in the tomato paste, water and spices; cook 1 minute.

3Off the heat, stir in the lime juice.

4For the shells, fry the tortillas in an inch of oil, folding into a U shape, until crisp.

5Fill the shells with the beef and top with lettuce, cheese, tomato and sour cream.
