Puffed rice cereal bound in a non-crystalline melted-marshmallow sugar network. The whole trick is not overheating the marshmallows — excess heat crystallizes the sugar into rock-hard bars.

Ingredients

  • 1/2 cup salted butter
  • 16 oz fresh miniature marshmallows
  • 9 cups crispy rice cereal
  • 1 tsp pure vanilla extract

Instructions

    Melt butter in a heavy saucepan over medium-low; add marshmallows and stir constantly until smooth.
