No-Yeast Cinnamon Rolls (Oven)

Cinnamon rolls leavened chemically instead of with yeast — no hours of proofing. The rise comes from baking soda reacting with the lactic acid in Greek yogurt.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch fine sea salt
  • 1 cup natural Greek yogurt
  • 1/3 cup melted butter (dough)
  • 1/4 cup softened butter (filling)
  • 1 tbsp ground cinnamon

Instructions

    Whisk flour, sugar, baking powder, soda, and salt; mix in yogurt and melted butter to a dough.

    Roll to a 10x12-inch rectangle, spread with softened butter, sprinkle cinnamon-sugar, and roll tightly.
