Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 4 oz cream cheese, softened
  • 1 clove garlic, minced
  • 2 cups fresh baby spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 1 egg beaten with 1 tbsp water (egg wash)

Instructions

  1. 1
    Preheat oven to 400°F (204°C).
  2. 2
Line a large baking sheet with parchment paper.
  3. 3
Roll out the thawed puff pastry sheet into a large square on a floured surface.
  4. 4
    Cut into 6 equal rectangles.
  5. 5
Place rectangles on the baking sheet.
  6. 6
Use a sharp knife to score a shallow border 1/2-inch inside the edge of each rectangle (do not cut all the way through).
  7. 7
Prick the interior centers with a fork.
  8. 8
In a small bowl, mix softened cream cheese and minced garlic until smooth.
  9. 9
Sauté chopped spinach in olive oil for 1 minute until wilted; squeeze out all excess moisture thoroughly.
  10. 10
Spread a tablespoon of the garlic cream cheese inside the scored border of each pastry.
  11. 11
Top with a layer of wilted spinach and a generous sprinkle of crumbled feta.
  12. 12
Brush the outer pastry borders with the egg wash.
  13. 13
Bake for 15 to 18 minutes until the edges are puffed up high and deeply golden.
  14. 14
    Serve warm.
