Classic Southern Buttermilk Biscuits

- 2 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup (1 stick) unsalted butter, frozen
- 1 cup cold buttermilk

Instructions

1Preheat oven to 450°F (230°C).

2Line a baking sheet with parchment paper.

3In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

4Grate the frozen butter into the flour mixture and toss lightly with a fork to coat.

5Pour in the cold buttermilk and stir gently just until a shaggy dough begins to form.

6Turn out onto a floured counter.

7Pat into a rectangle, then fold it in half.

8Turn 90 degrees and repeat this process 5 times to build layers.

9Pat dough down to 1 inch thick.

10Cut into rounds using a sharp 2.5- inch biscuit cutter without twisting the cutter (twisting seals the edges and prevents rising).

11Arrange biscuits closely together on the baking sheet so they touch (this helps them rise higher).

12Bake for 12 to 15 minutes until the tops are beautifully golden brown.
