Hearty Black Bean Quesadillas

A crispy, flavorful, and incredibly budget-friendly meal stuffed with black beans, corn, spices, and melted cheese. Excellent for large families or meal prep.

Ingredients

  • 1 can (15oz) Black beans, rinsed and drained
  • 1 cup Frozen corn (no need to thaw)
  • 1/2 cup Red onion, finely diced
  • 1 clove Garlic, minced
  • 1/4 bunch Fresh cilantro, chopped
  • 2 cups Shredded cheddar or Monterey Jack cheese
  • 1 tbsp Taco seasoning mix
  • 10 medium Flour tortillas (7-inch diameter)

Instructions

    In a large bowl, combine the drained black beans, frozen corn, diced red onion, minced garlic, chopped cilantro, shredded cheese, and taco seasoning.

    Stir the mixture thoroughly until all ingredients are evenly distributed and coated in the seasoning.

    Place about 1/3 cup of the filling onto one half of a flour tortilla, then fold the other half over to create a half-moon shape.

    Heat a large skillet over medium heat.

    Place the quesadilla in the dry skillet (or add a tiny brush of oil/ butter for extra crunch).
