Quick Savory Peanut Noodles

A rapid, deeply comforting Asian-style noodle dish that uses standard box spaghetti and basic pantry fats to construct an insanely rich, nutty sauce.

Yield 4 servings

Ingredients

  • 8 oz Dry spaghetti, linguine, or fettuccine noodles
  • 1/3 cup Creamy smooth peanut butter
  • 3 tbsp Warm water
  • 2 tbsp Soy sauce
  • 1 tbsp Honey or dark brown sugar
  • 1 clove Garlic, minced
  • 1 tsp Fresh ginger , grated fine
  • 1 tsp Rice vinegar or lime juice
  • 2 stalks Green onions, finely sliced for garnish

Instructions

  1. 1
Bring a large pot of water to a rolling boil.
  2. 2
Cook your spaghetti noodles according to the timing specified on the box packaging, then drain well.
  3. 3
While the pasta cooks, add the creamy peanut butter and warm water to a medium mixing bowl.
  4. 4
Whisk them together vigorously until the peanut butter thins out into a smooth cream.
  5. 5
Add the soy sauce, honey or brown sugar , minced garlic, grated ginger , and rice vinegar to the peanut mixture.
  6. 6
Whisk well until a glossy, fluid sauce forms.
  7. 7
Dump the hot, freshly drained noodles directly into the bowl containing the peanut sauce.
  8. 8
Toss the pasta continuously for a minute or two until the noodles completely absorb the sauce.
  9. 9
Garnish with green onions and serve warm or cold.
