- 3 medium Very overripe bananas, completely brown or speckled
- 1/3 cup Melted butter , vegetable oil, or coconut oil
- 3/4 cup Granulated sugar
- 1 large Egg, beaten well
- 1 tsp Vanilla extract
- 1 tsp Baking soda
- 1 pinch Salt
- 1.5 cups All-purpose flour

Instructions

1Preheat your oven to 350°F (175°C) and grease a standard 4x8 inch metal or glass loaf pan.

2In a large mixing bowl, peel the bananas and use a sturdy fork to mash them down completely until they form a smooth, liquid consistency.

3Pour the melted butter or oil into the mashed bananas and stir well with a wooden spoon.

4Mix in the sugar , beaten egg, and vanilla extract until completely incorporated.

5Sprinkle the baking soda and salt across the top of the liquid batter . Gently stir in the flour , stopping the moment the white flour disappears (do not over-mix, or the bread will become tough).

6Pour the thick batter into the loaf pan and bake for 50 to 60 minutes until the top is split down the center and a toothpick emerges clean.
