Ingredients

  • 3 medium Very overripe bananas, completely brown or speckled
  • 1/3 cup Melted butter , vegetable oil, or coconut oil
  • 3/4 cup Granulated sugar
  • 1 large Egg, beaten well
  • 1 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1 pinch Salt
  • 1.5 cups All-purpose flour

Instructions

  1. 1
Preheat your oven to 350°F (175°C) and grease a standard 4x8 inch metal or glass loaf pan.
  2. 2
In a large mixing bowl, peel the bananas and use a sturdy fork to mash them down completely until they form a smooth, liquid consistency.
  3. 3
Pour the melted butter or oil into the mashed bananas and stir well with a wooden spoon.
  4. 4
Mix in the sugar , beaten egg, and vanilla extract until completely incorporated.
  5. 5
Sprinkle the baking soda and salt across the top of the liquid batter . Gently stir in the flour , stopping the moment the white flour disappears (do not over-mix, or the bread will become tough).
  6. 6
Pour the thick batter into the loaf pan and bake for 50 to 60 minutes until the top is split down the center and a toothpick emerges clean.
