Clafoutis aux Cerises

A rustic, elegant French dessert consisting of sweet dark cherries blanketed in a smooth, pancake-like batter that bakes into a warm, puffy custard.

Ingredients

  • 1.25 cups Whole milk
  • 1/3 cup Granulated sugar
  • 3 Large eggs
  • 1 tbsp Vanilla extract
  • 1/8 tsp Almond extract
  • 1/2 cup All-purpose flour
  • 3 cups Fresh sweet black cherries, pitted
  • Powdered sugar For dusting

Instructions

    Preheat your oven to 350°F (175°C) and grease a 9-inch round baking dish or pie pan with butter . In a blender , combine the milk, eggs, sugar , flour , vanilla extract, and almond extract.

    Blend at high speed for 1 minute until completely smooth and frothy.

    Pour a thin layer of the batter (about 1/4 inch) into the bottom of the greased baking dish.

    Place the dish on a hot stovetop burner for 1 to 2 minutes until a film of batter sets at the bottom, then remove from heat.

    Spread the sweet cherries evenly over this set layer of batter . Pour the remaining liquid batter carefully over the top of the cherries.

    Bake in the center of the oven for 45 to 50 minutes until the clafoutis is puffed up, golden brown around the edges, and a toothpick inserted into the custard center comes out clean.

    Dust with powdered sugar and serve warm.
