Tarte Tatin

Ingredients

  • 6 to 8 Large, firm apples (like Granny Smith or Golden Delicious), peeled and quartered
  • 6 tbsp Unsalted butter , softened
  • 1 cup Granulated sugar
  • 1 sheet Puff pastry, rolled into a 10-inch circle

Instructions

    Spread the softened butter thickly over the bottom of a heavy, oven-safe 9-inch skillet or Tarte Tatin pan.

    Sprinkle the granulated sugar evenly over the butter . Pack the apple quarters tightly into the skillet, standing them up on their sides in concentric circles.

    They will shrink as they cook, so crowd them together as much as possible.

    Place the skillet over medium heat on the stovetop.

    Cook un-stirred for 20 to 25 minutes, allowing the butter and sugar to bubble and transform into a rich, amber-colored caramel liquid.

    Remove the skillet from the heat and let it cool for 10 minutes.

    Preheat your oven to 400°F (200°C).

    Drape the circle of puff pastry carefully over the top of the caramelized apples, tucking the excess edges down inside the rim of the skillet.
