- 3 cups Potatoes, peeled and sliced
- 3 cups Leeks, white and light green parts, washed and sliced
- 6 cups Water or light chicken stock
- 1.5 tsp Salt
- 3 tbsp Unsalted butter or heavy cream
- 2 tbsp Fresh parsley or chives, minced

Instructions

1Place the sliced potatoes, washed leeks, water or stock, and salt into a large, heavy soup pot.

2Bring the liquid to a boil over high heat, then drop the flame down to low, cover the pot, and let it simmer for 40 to 50 minutes until the vegetables are completely soft.

3Mash the vegetables directly in the pot with a fork or potato masher for a rustic texture, or process briefly with an immersion blender for a smoother consistency.
