A true New Orleans classic. The slow cooking breaks down the kidney beans to create a rich, creamy gravy that coats the smoked sausage.

Ingredients

  • 1 lb dried red kidney beans, rinsed
  • 1 lb smoked sausage (Andouille preferred), sliced
  • 1 green bell pepper, diced
  • 1 celery stalk, diced
  • 1 onion, diced
  • 6 cups chicken broth
  • 1 tsp Cajun seasoning

Instructions

    Place all ingredients into the pressure cooker.

    Cook on High Pressure for 45 minutes.

    Natural release for 15 minutes.

    Mash some beans to thicken, and serve over cooked white rice.
