- 2 lbs beef or goat
- 4 dried guajillo chiles
- 1 tsp cumin
- 2 cups Oaxaca cheese
- 12 corn tortillas
- 4 cups rich meat consommé

Instructions

1Slow-braise the meat in a chile-infused broth until tender.
