Pork Chops Cacciatore
Pork Chops Cacciatore — a recipe imported from the Wikibooks Cookbook.
Ingredients
- Double batch basic polenta
- 6 ea. (1 kg) 4 cm thick boneless pork chops
- 1 can (28 oz) tomatoes, preferably "fire roasted" or similar
- 1 large carrot, peeled
- 1 medium onion, peeled
- 15 ml olive oil
- 15 ml butter
- 4 cloves garlic, peeled
Instructions
-
1Slice onion into 1 cm half-rings.
-
2Start making the polenta.
-
3Once the polenta is stable, sweat onions with olive oil and butter.
-
4When onions are translucent, clear spaces for the pork chops, and put them pork chops into these spaces.
-
5Lightly brown the pork chops on both sides, remove from pan and set aside. Allow fond to develop slightly, then deglaze with a quarter of the tomatoes.
-
6Grind the rest of the tomatoes, along with the garlic, in a blender until a rough paste is formed. Then, add to the onion mixture.
-
7Turn heat to high, and allow sauce to simmer and darken slightly in color. When this occurs, turn heat to low.
-
8Finely chop the carrot and stir it in, then nestle the pork chops into the sauce and allow to simmer until the pork chops are done to your liking, about 20 minutes or so.
-
9Serve as soon as possible. To serve, spoon polenta on to plates or bowls and place pork chop and sauce on top.
