Gurudi (Nigerian Coconut Biscuit)
Gurudi, also called gurundi, is a Nigerian coconut biscuit made from finely-grated coconut, cassava starch, and sugar.
Ingredients
- 1 fresh coconut
- 65 g white sugar
- 80 g cassava starch
- 1 pinch nutmeg
Instructions
-
1Gently crack open the coconut, and separate the meat from the shell. Use a grater or food processor to shred the coconut.
-
2Combine the grated coconut, sugar, cassava starch, and nutmeg. Stir in water until it forms a dough ball.
-
3Roll out the dough until thin. Cut out square biscuits, and transfer them to a buttered baking tray.
-
4Bake the biscuits for about 20–25 minutes at 150°C (300°F) until golden brown and crisped.
-
5Remove the biscuits from the oven, and let cool.
