- ½ teaspoon paprika
- ¼ teaspoon turmeric
- ¼ teaspoon salt, or to taste
- Fresh cilantro, chopped, for garnish
Instructions
-
1Heat the olive oil in a large skillet or frying pan over medium heat.
-
2Add the chopped onions to the pan and sauté until they become translucent and slightly browned.
-
3Stir in the minced garlic and chopped green chilies, and sauté for an additional minute until fragrant.
-
4Add the chopped tomatoes to the pan and cook until they begin to soften.
-
5In a mixing bowl, beat the eggs and add the berbere spice blend, paprika, turmeric, and salt. Mix well to combine.
-
6Push the sautéed vegetables to one side of the pan, creating a space for the eggs.
-
7Pour the beaten eggs into the empty space in the pan and scramble them with a wooden spoon or spatula until they are fully cooked.
-
8Mix the scrambled eggs with the sautéed vegetables in the pan.
-
9Tear the pieces of injera into small bite-sized pieces and add them to the pan. Stir well to combine all the ingredients.
-
10Cook for a few more minutes, allowing the injera to absorb the flavors and soften slightly.
-
11Remove the pan from heat and garnish with freshly chopped cilantro. Serve hot, and enjoy the spicy and savory flavors of this traditional Ethiopian dish.
