Hedeby millet stew

Vegetarian millet stew made with ingredients found in 9th century Hedeby, a trading town in Viking period.

Ingredients

  • 1 spoon butter, for vegetarians plant-based oil
  • 1 onion, chopped
  • 1 big carrot, diced
  • 250 g cabbage, sliced
  • 300g water
  • 100 g millet
  • Teaspoon of dried thyme
  • dried plums, handfull diced
  • 100 g of fresh spinach, chopped
  • salt, to preference

Instructions

    Melt the butter and add the onions on low fire.

    After 5 minutes add the carrot and cabbage. Stir until soften.

    Add the water and let it warm till boil.

    Add the thyme, the dried plums and salt.

    Add millet, turn fire till low so it can simmer for 20 minutes.

    Get the pan from the fire and add the spinach.

    Let it rest for another 5 minutes. Enjoy!

    Variation: carrot can also be turnips or root celery
